This has been one of my family's favourites, I've had it for many years. Very nice and a lovely lunchbox filler or to have with a lovely cup of tea or coffee. - maggie1945

Ingredients

  • 250 g butter
  • 250 g sugar
  • 2 extra-large egg
  • 250 g plain flour
  • 250 g cornflour
  • 2 tsp baking powder
  • 450 g dates chopped
  • 2 lemon juiced
  • 4 tbs water

Method

  • Step 1
    Combine dates with water and lemon juice in a saucepan. Cook over low heat until the dates are soft. Cool.
  • Step 2
    Cream butter and sugar with an electric beater. Add eggs and beat.
  • Step 3
    Sift in the flour, cornflour and baking powder and combine.
  • Step 4
    Knead the shortcake mixture and divide mixture in half. Roll out both halves to fit a slice tray. Place one half into the well greased tray.
  • Step 5
    Spread with date mixture. Top with remaining shortcake mixture.
  • Step 6
    Bake at 180-190C for 25 minutes.
  • Step 7
    When cold ice with lemon icing.
