Ingredients

  • 440 g canned tuna drained flaked
  • 1 cup long-grain white rice
  • 30 g butter
  • 1 egg
  • 1 tsp salt and pepper
  • 2 tbs plain flour
  • 1 1/2 tbs curry powder
  • 1 1/2 cup milk
  • 1/2 cup mayonnaise
  • 2 tsp lemon juice
  • 2 tbs parsley chopped
  • 1 egg
  • 60 g cheese grated

Method

  • Step 1
    Cook rice in boiling salted water for 12 minutes or until tender, drain. Combine rice with butter, egg, salt and pepper.

    Line a loaf tin with foil. Press rice mixture over base and sides of tin.
  • Step 3
    Arrange tuna over rice base.
  • Step 4
    Melt extra butter, add flour and curry powder, stir until smooth, cook for 1 minute. Remove from heat, add milk gradually, stirring until smooth.
  • Step 5
    Add mayonnaise, return to heat, stir until sauce boils and thickens. Add lemon juice and parsley, reduce heat, simmer 1 minute.
  • Step 6
    Remove from heat add extra beaten egg, cool slightly. Spoon over rice base, sprinkle with grated cheese.
  • Step 7
    Bake at 180C for 25 to 35 minutes or until golden brown on top.
