A delicious slice served with a salad or vegetables.
Ingredients
- 440 g canned tuna drained flaked
- 1 cup long-grain white rice
- 30 g butter
- 1 egg
- 1 tsp salt and pepper
- 2 tbs plain flour
- 1 1/2 tbs curry powder
- 1 1/2 cup milk
- 1/2 cup mayonnaise
- 2 tsp lemon juice
- 2 tbs parsley chopped
- 1 egg
- 60 g cheese grated
Method

Step 1Cook rice in boiling salted water for 12 minutes or until tender, drain. Combine rice with butter, egg, salt and pepper.

Step 2Line a loaf tin with foil. Press rice mixture over base and sides of tin.

Step 3Arrange tuna over rice base.

Step 4Melt extra butter, add flour and curry powder, stir until smooth, cook for 1 minute. Remove from heat, add milk gradually, stirring until smooth.

Step 5Add mayonnaise, return to heat, stir until sauce boils and thickens. Add lemon juice and parsley, reduce heat, simmer 1 minute.

Step 6Remove from heat add extra beaten egg, cool slightly. Spoon over rice base, sprinkle with grated cheese.

Step 7Bake at 180C for 25 to 35 minutes or until golden brown on top.
