A very refreshing salad with a delicious dressing that's just a little different.
Ingredients
- 1 continental cucumber
- 300 g cooked prawns peeled
- 2 shallots cut diagonally sliced
- 1 red chilli deseeded halved small thinly sliced
- 2 tbs peanut oil
- 2 tbs fresh lemon juice
- 1 tsp brown sugar
- 30 g walnuts chopped
- 100 g grape tomato halved
Method

Step 1Peel the cucumber if desired, then cut in half length-ways. Use a teaspoon to scoop out the seeds, and discard. Cut the cucumber into thin slices.

Step 2Combine the prawns, cucumber, shallots, mint and chilli in a bowl.

Step 3Combine the lemon or lime juice, peanut oil, and brown sugar in a small bowl. Drizzle over the salad and toss to combine. Refrigerate to chill.

Step 4Place on serving plates and sprinkle with the chopped walnuts, serve immediately.
Recipe Notes
Other ingredients that could be used, i.e. chopped cashews, whole parsley leaves, coriander leaves. Lime can substitute lemon juice.
