Perfect with barbecued meats, or to bring a plate to a party, this incredibly delicious summer couscous stirs fresh crisp salad ingredients like tomatoes, cucumber and capsicum through couscous for a light and bright side dish.
Ingredients
- 200 g couscous
- 200 ml chicken stock (liquid)
- 1/4 cup olive oil
- 1 cucumber diced seeds removed
- 1/2 red onion finely sliced
- 1 yellow capsicum diced seeds removed
- 2 tomatoes diced seeds removed
- 2 tbs parsley chopped
- 2 tbs lemon juice
- 1 tbs hummus optional
- 1 pinch salt and pepper
Method

Step 1Combine stock and 1 tablespoon of the oil in a small saucepan, heat just until boiling then pour over the couscous.

Step 2Cover and set aside for 10 minutes.

Step 3Fluff couscous with a fork, season with salt and pepper.

Step 4Allow to cool, stir in cucumber, onion, capsicum, tomato and parsley.

Step 5Separatly combine remaining oil, lemon juice and hummus. Add to the couscous and stir to combine.

Recipe Notes
What is couscous made of?
Couscous is made of tiny steamed balls of semolina. Most couscous available in supermarkets is 'instant', which makes it super quick and easy to cook.
What can I serve with couscous salad?
Couscous salad is delicious on the side with grilled chicken, steak or fish. If you have leftover barbecue chicken, shred it and serve on top of the couscous for an all-in-one meal.
