Ingredients

  • 1 1/2 cup rice cooked
  • 2 cup coconut milk
  • 25 g desiccated coconut
  • 5 tsp sugar
  • 1 egg beaten

Method

  • Step 1
    Place rice, coconut, 1½ cups coconut milk and sugar in a saucepan.

  • Step 2
    Cook on low-medium heat until thick and creamy, approximately 20 minutes for white rice and 30-40 minutes for brown rice, stirring occasionally.
  • Step 3
    Add egg.
  • Step 4
    Add remainder of coconut milk if using white rice.
  • Step 5
    Continue cooking for 3-5 minutes, stirring continuously.
  • Step 6
    Remove from heat.
Recipe Notes

This recipe is not overly sweet, so if you prefer your rice pudding a little sweeter, add more sugar. I tend to use light coconut milk and the result is still a creamy and delicious pudding. You may also wish to use half coconut milk and half regular milk for a slightly subtler coconut flavour. Skim milk may be used. You can also use brown rice, just adjust the cooking time to 30 - 40 mins.
