A delicious, dairy-free, creamy rice pudding with a coconut twist!
Ingredients
- 1 1/2 cup rice cooked
- 2 cup coconut milk
- 25 g desiccated coconut
- 5 tsp sugar
- 1 egg beaten
Method

Step 1Place rice, coconut, 1½ cups coconut milk and sugar in a saucepan.

Step 2Cook on low-medium heat until thick and creamy, approximately 20 minutes for white rice and 30-40 minutes for brown rice, stirring occasionally.

Step 3Add egg.

Step 4Add remainder of coconut milk if using white rice.

Step 5Continue cooking for 3-5 minutes, stirring continuously.

Step 6Remove from heat.
Recipe Notes
This recipe is not overly sweet, so if you prefer your rice pudding a little sweeter, add more sugar. I tend to use light coconut milk and the result is still a creamy and delicious pudding. You may also wish to use half coconut milk and half regular milk for a slightly subtler coconut flavour. Skim milk may be used. You can also use brown rice, just adjust the cooking time to 30 - 40 mins.
