Ingredients

  • 1 cup basmati rice
  • 270 ml coconut milk
  • 1/2 cup water
  • 1/4 tsp salt
  • 1/2 bunch coriander chopped
  • 3 spring onions thinly sliced

Method

  • Step 1
    Place rice, coconut milk, salt and water in a pan, stir, cover with pan lid, bring to boil and cook rice according to packet instructions.
  • Step 2
    Check rice once or twice to ensure that it is not too dry. Add more water if needed.
  • Step 3
    Leave cooked rice to stand, covered, for up to 5 minutes.
  • Step 4
    Fluff rice with a fork, add coriander and chopped onion, mix through.
  • Step 5
    Serve immediately.
Recipe Notes
Nice with Thai marinated chicken or fish.
