Coconut flavoured rice, great to accompany chicken or fish.
Ingredients
- 1 cup basmati rice
- 270 ml coconut milk
- 1/2 cup water
- 1/4 tsp salt
- 1/2 bunch coriander chopped
- 3 spring onions thinly sliced
Method

Step 1Place rice, coconut milk, salt and water in a pan, stir, cover with pan lid, bring to boil and cook rice according to packet instructions.

Step 2Check rice once or twice to ensure that it is not too dry. Add more water if needed.

Step 3Leave cooked rice to stand, covered, for up to 5 minutes.

Step 4Fluff rice with a fork, add coriander and chopped onion, mix through.

Step 5Serve immediately.
