So light and fluffy no one will ever know you made this using a packet cake mix.
Ingredients
- 400 g traditional English tea cake mix
- 2 egg
- 80 g soft butter
- 1/3 cup milk
- 3/4 cup banana mashed
- 1/4 cup sultanas optional
- 1 oil spray
Topping
- 1 tbs butter melted
- 1 tsp cinnamon sugar
Method

Step 1Preheat oven to 180C.

Step 2Line 12 muffin tins with paper cases and lightly coat with oil spray.

Step 3In a large mixing bowl, place cake mix, eggs, butter and milk.

Step 4Beat on low speed until ingredients are combined, then increase speed to medium for approximately 2 minutes.

Step 5With a spatula, stir in banana and sultanas until just combined.

Step 6Divide mixture between muffin cases.

Step 7Bake for approximately 18-20 minutes.

Step 8While still warm, brush tops of muffins with melted butter and sprinkle with cinnamon sachet.

Recipe Notes
This is the perfect way to use up ripe bananas. A minimum of 2 bananas are needed. The packet mix is readily available at the supermarket. Delicious eaten while still warm, but equally as moist and light the next day for morning tea.
