This easy fruit cake makes an excellent Christmas gift. The recipe makes two 15 cm cakes. The hot syrup poured over when it comes out of the oven, makes it very moist and rich.
Ingredients
- 400 g sweetened condensed milk
- 400 g water
- 250 g butter
- 500 g mixed fruit beaten
- 3 egg beaten
- 1/4 cup glace cherries
- 1/4 cup mixed nuts
- 2 1/2 cup plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp cinnamon sugar
- 1 tsp instant coffee powder
- 1 pinch salt
Syrup
- 1/2 cup brandy
- 3 tbs golden syrup
Method

Step 1Boil the the condensed milk, water, butter and mixed fruit together for 3 minutes. Cool.

Step 2Add remaining ingredients.

Step 3Place mixture into 2 x 15 cm tins lined with baking paper.

Step 4Bake at 125-140C for 1-2 hours.

Step 5Bring the syrup ingredients to the boil. Pour slowly over hot cake.
Recipe Notes
Substitute treacle or molasses for some or all of the golden syrup to get a darker, richer taste. I boil the syrup in the microwave for two minutes. Sherry, whisky or rum may be substituted for the brandy. Strong Earl Grey tea with a teaspoon of brandy or rum cake flavouring may be substituted for the alcohol.
