Ingredients

  • 6 egg separated
  • 1/4 cup caster sugar
  • 2 tbs cream
  • 1 tbs plain flour
  • 120 g dark chocolate melted
  • 20 g butter
  • 120 g fresh raspberries
  • 1/2 cup icing sugar sifted

Method

  • Step 1
    Preheat oven to 190C or 170C fan forced.
  • Step 2
    In a large bowl, whisk together egg yolks, sugar, cream, flour and melted chocolate.
  • Step 3
    Using an electric mixer, beat eggwhites until soft peaks form. Gently fold eggwhites into chocolate mixture with a spatula.
  • Step 4
    Melt half of butter in a large frying pan on low heat.
  • Step 5
    Pour in half of egg mixture. Bake omelette for 3-6 minutes, or until puffed and set in the middle.
  • Step 6
    Slide omelette onto a warm serving plate and top with half of raspberries. Fold omelette in half and dust with icing sugar. Repeat with remaining ingredients to make another omelette.
  • Step 7
    Cut omelettes into thick slices and serve immediately with icecream.
