Found this recipe and it's so delicious I just had to share.
Ingredients
- 6 egg separated
- 1/4 cup caster sugar
- 2 tbs cream
- 1 tbs plain flour
- 120 g dark chocolate melted
- 20 g butter
- 120 g fresh raspberries
- 1/2 cup icing sugar sifted
Method

Step 1Preheat oven to 190C or 170C fan forced.

Step 2In a large bowl, whisk together egg yolks, sugar, cream, flour and melted chocolate.

Step 3Using an electric mixer, beat eggwhites until soft peaks form. Gently fold eggwhites into chocolate mixture with a spatula.

Step 4Melt half of butter in a large frying pan on low heat.

Step 5Pour in half of egg mixture. Bake omelette for 3-6 minutes, or until puffed and set in the middle.

Step 6Slide omelette onto a warm serving plate and top with half of raspberries. Fold omelette in half and dust with icing sugar. Repeat with remaining ingredients to make another omelette.

Step 7Cut omelettes into thick slices and serve immediately with icecream.

Recipe Notes
States that this recipe serves 8, I could eat one on my own! As a dessert I would say this serves 4-6.
