Egg free, dairy free, nut free - the perfect loaf for delicate stomachs and it tastes lovely.
Ingredients
- 2 1/2 cups self-raising flour
- 3/4 cup brown sugar
- 2 tbs cocoa
- 1/2 tbs ground cinnamon
- 1 cup rice milk
- 3 tbs rice bran
- 1 tsp vanilla essence
- 3 green apples peeled
Method

Step 1Preheat oven to 180C. Half chop and half grate apple.

Step 2Combine dry ingredients, then add remaining wet ingredients, into a large bowl.

Step 3Mix until mixture is completely moist.

Step 4Pour into greased pan or muffin tray.

Step 5Bake for 1 hour for a loaf, or 30 minutes for muffins.

Recipe Notes
Cooking time can vary depending on the size and age of the apples, so skewer test near the end of cooking to ensure skewer comes out clean.
Add sultanas for extra sweetness if desired. Create a marbling effect by adding cocoa to one half of the batter only, then stirring it through the plain batter before baking.
Allow to cool before serving.
