Choc-Hazelnut Buckwheat Balls

Ingredients

  • 1 cup buckwheat
  • 1 1/2 cups hazelnuts
  • 1 1/2 cups dates pitted
  • 2 tbs cocoa
  • 1 tsp vanilla essence

Method

  • Step 1
    Place buckwheat in a bowl and cover with cold water. Set aside for an hour. Drain well.
  • Step 2
    Place 1/2 cup hazelnuts in the bowl of a food processor and blitz to form a crumb. Remove to a bowl and set aside.
  • Step 3
    Put remaining hazelnuts and dates into food processor bowl with drained buckwheat. Blitz well until a paste forms. You may need to scrape down the sides occasionally. Add cocoa and vanilla and process a little longer.

  • Step 4
    Using damp hands, roll teaspoons full of mixture into small bowls. Roll in reserved hazelnut crumb.
Recipe Notes

Despite what the name suggests, buckwheat is gluten free. It’s a seed, not a grain.

Sometimes called buckwheat groats, raw buckwheat can be found in the health food section of most supermarkets.

Replace some or all of the hazelnuts with almonds if you prefer.
