Crispy spicy chicken with noodles, and believe it or not it is low fat!!
Ingredients
- 1 1/2 tsp chilli powder
- 3 tbs cornflour
- 1 1/2 tsp salt
- 2 tbs oil
- 350 g (fillets) chicken thighs sliced
- 4 spring onion sliced
- 2 tbs sherry
- 500 g Hokkien noodle separated
- 2 tbs oyster sauce
- 250 g bok choy separated trimmed washed
Method

Step 1Combine the chilli powder with the cornflour and the salt.

Step 2Heat the oil in a wok over high heat. Coat approximately 5 chicken strips in the cornflour mixture and fry for 3 minutes or until golden. Drain on paper towel to remove excess oil and repeat with the remaining chicken. Remove and set aside

Step 3Reheat the wok over medium heat. Add the spring onion and stir fry for 1 minute. Add the sherry and the noodles, tossing well with a pair of wooden spoons until noodles soften.

Step 4Add the oyster sauce and 2 tablespoons of water, cover and steam for 3 minutes or until noodles are tender.

Step 5Add the chicken and the bok choy and toss well. Cover and steam for 30 seconds only. Serve immediately.
