A beautiful spicy lamb dish, which goes well with fried rice. I make in a pressure cooker, but it doesn't have to be.
Ingredients
- 1 kg lamb forequarter chops
- 1/2 onion diced large
- 1/2 onion large sliced
- 3 bird's eye chilli chopped
- 5 cloves garlic crushed
- 1/4 cup dark soy sauce
- 1/4 cup tomato sauce
- 1 tbs oil
Method

Step 1Divide chops into 3 or 4 pieces each.

Step 2Heat oil in a large saucepan or pressure cooker.

Step 3Fry diced onion for 3-4 minutes.

Step 4Add garlic and chilli and fry for another 2 minutes, stirring.

Step 5Add meat and mix, then add soy sauce and tomato sauce and mix well.

Step 6Cover and if using a pressure cooker bring up to a medium pressure and cook for 20 minutes. Or simmer covered in a normal saucepan for 20 minutes, stirring once or twice.

Step 7Release pressure and remove lid.

Step 8Simmer uncovered for approximately 10 minutes to reduce liquid.

Step 9Stir in remaining onion and cook for another 5 minutes.

Recipe Notes
You can also use 1 kg of chicken drumsticks instead of lamb. Serve with fried rice. Reduction time may be a little longer.
