This is a very tasty rice to serve with your next stir-fry. It's very easy to make. I have a large family, so this recipe is for a full rice cooker amount of 6-8 persons.
Ingredients
- 1 cup jasmine rice
- 400 ml light coconut cream
- 1 cup vegetable stock
- 1 tsp chilli flakes *to taste *optional
Method

Step 1Add enough rice to rice cooker for 6 - 8 people as per instructions.

Step 2Instead of water add the coconut cream and stock to the water level required.

Step 3Add chilli flakes to taste as required, stir well.

Step 4Start rice cooker.

Step 5Stir before serving to evenly mix in chilli flakes.

Recipe Notes
You will have to use a smaller 270mL tin of coconut cream if you are cooking for between 2-4 persons. This is one of my family's favourites and the kids will eat a bowl full and come back for more. I have never failed with this recipe, the rice comes out separated and fluffy every time. Delicious reheated the next day. Use Jasmine or other long grain white rice.
