I have cooked this recipe many times before and I'm always asked for the recipe.

Ingredients

  • 2 tbs vegetable oil
  • 1 onion finely chopped
  • 2 garlic cloves crushed
  • 2 tsp ginger grated
  • 1 tsp ground turmeric
  • 3 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp chilli powder
  • 400 g canned chopped tomatoes
  • 500 g sweet potato peeled cut into 2cm cubes
  • 1 1/2 cups vegetable stock
  • 400 g canned chickpeas drained rinsed
  • 1 bunch spinach chopped washed

Method

  • Step 1
    Heat oil in large saucepan over medium heat.
  • Step 2
    Add onion and cook for 3 minutes.
  • Step 3
    Add garlic, ginger, turmeric, coriander, cumin and chilli and cook for 2 minutes.

  • Step 4
    Add tomatoes, sweet potato and stock. Bring to a boil, reduce to a simmer and partially cover.
  • Step 5
    Cook for 25 minutes or until sweet potato is tender.
  • Step 6
    Add the chickpeas, stir and cook for 5 minutes.
  • Step 7
    Add the spinach and cook until wilted.

  • 1 saucepan
Recipe Notes

I find 400g of chickpeas are plenty, but you can add more.
