I have cooked this recipe many times before and I'm always asked for the recipe.
Ingredients
- 2 tbs vegetable oil
- 1 onion finely chopped
- 2 garlic cloves crushed
- 2 tsp ginger grated
- 1 tsp ground turmeric
- 3 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp chilli powder
- 400 g canned chopped tomatoes
- 500 g sweet potato peeled cut into 2cm cubes
- 1 1/2 cups vegetable stock
- 400 g canned chickpeas drained rinsed
- 1 bunch spinach chopped washed
Method

Step 1Heat oil in large saucepan over medium heat.

Step 2Add onion and cook for 3 minutes.

Step 3Add garlic, ginger, turmeric, coriander, cumin and chilli and cook for 2 minutes.

Step 4Add tomatoes, sweet potato and stock. Bring to a boil, reduce to a simmer and partially cover.

Step 5Cook for 25 minutes or until sweet potato is tender.

Step 6Add the chickpeas, stir and cook for 5 minutes.

Step 7Add the spinach and cook until wilted.

Recipe Notes
I find 400g of chickpeas are plenty, but you can add more.
