Ingredients

  • 500 g chicken mince
  • 1 garlic clove finely chopped
  • 1/4 tsp ground black pepper
  • 1 tbs onion flakes
  • 1 tsp chilli flakes dried *to taste
  • 2 tbs sun-dried tomato finely chopped
  • 2 tbs red capsicum finely chopped roasted
  • 2 tbs basil pesto
  • 1 tbs tomato paste
  • 1 egg
  • 3 tbs dried breadcrumbs
  • 1 tsp olive oil
  • 1 cooking oil spray

Method

  • Step 1
    Mix all ingredients together in a bowl until well combined.
  • Step 2
    Shape into 8 equal sized patties and flatten to approximately 2½ cm thick.
  • Step 3
    Lightly spray a non-stick frypan with cooking spray and heat to a medium heat.
  • Step 4
    Cook patties in pan until cooked through, turning once during cooking.
  • Step 5
    Serve as desired.
Recipe Notes
Breadcrumbs can be substituted with gluten free cornflake crumbs.
