Fragrantly seasoned chicken mince patties, ideal hot as part of a main meal or cold on a salad sandwich.
Ingredients
- 500 g chicken mince
- 1 garlic clove finely chopped
- 1/4 tsp ground black pepper
- 1 tbs onion flakes
- 1 tsp chilli flakes dried *to taste
- 2 tbs sun-dried tomato finely chopped
- 2 tbs red capsicum finely chopped roasted
- 2 tbs basil pesto
- 1 tbs tomato paste
- 1 egg
- 3 tbs dried breadcrumbs
- 1 tsp olive oil
- 1 cooking oil spray
Method

Step 1Mix all ingredients together in a bowl until well combined.

Step 2Shape into 8 equal sized patties and flatten to approximately 2½ cm thick.

Step 3Lightly spray a non-stick frypan with cooking spray and heat to a medium heat.

Step 4Cook patties in pan until cooked through, turning once during cooking.

Step 5Serve as desired.
Recipe Notes
Breadcrumbs can be substituted with gluten free cornflake crumbs.
