This hearty chicken hotpot is perfect for the slow cooker.

Ingredients

  • 1kg chicken breast fillets
  • 1 red onion
  • 2 carrots
  • 4 celery sticks
  • 100g bacon rashers pieces
  • 410g canned tomatoes with basil and garlic
  • 375ml chicken stock (liquid)
  • 1/2 cup water
  • 1 cup plain flour
  • 1 tbs olive oil
  • 1 pinch sea salt
  • 1 pinch pepper

Method

  • Step 1
    Turn on the slow cooker, then add tinned tomatoes, chicken stock and water.
  • Step 2
    Slice carrots and celery, then add to the slow cooker.
  • Step 3
    In a hot frypan, add olive oil and fry off diced red onion and bacon pieces. Add to the slow cooker.

  • Step 4
    Dice chicken fillets and place in the flour. Add olive oil to the pan and shake excess flour from chicken.
  • Step 5
    Brown chicken and add to the slow cooker with salt and pepper.
  • Step 6
    Place lid on the slow cooker and cook on low for about 6 hours.

  • 1 slow cooker
Recipe Notes

Chicken thighs can be used.
