This hearty chicken hotpot is perfect for the slow cooker.
Ingredients
- 1kg chicken breast fillets
- 1 red onion
- 2 carrots
- 4 celery sticks
- 100g bacon rashers pieces
- 410g canned tomatoes with basil and garlic
- 375ml chicken stock (liquid)
- 1/2 cup water
- 1 cup plain flour
- 1 tbs olive oil
- 1 pinch sea salt
- 1 pinch pepper
Method

Step 1Turn on the slow cooker, then add tinned tomatoes, chicken stock and water.

Step 2Slice carrots and celery, then add to the slow cooker.

Step 3In a hot frypan, add olive oil and fry off diced red onion and bacon pieces. Add to the slow cooker.

Step 4Dice chicken fillets and place in the flour. Add olive oil to the pan and shake excess flour from chicken.

Step 5Brown chicken and add to the slow cooker with salt and pepper.

Step 6Place lid on the slow cooker and cook on low for about 6 hours.

- 1 slow cooker
Recipe Notes
Chicken thighs can be used.
