Chicken Burgers with Warm Asian Slaw

Ingredients

  • 500 g chicken mince
  • 2 spring onion sliced
  • 1/2 tbs ground coriander
  • 1/2 tbs curry powder
  • 2 tbs sweet chilli sauce
  • 1/2 tbs lemon juice
  • 1/2 cup fresh coriander chopped
  • 1 tbs peanut oil

Warm Asian slaw

  • 1 tsp peanut oil
  • 220 g bean sprouts
  • 1/2 green capsicum cut into matchsticks
  • 2 spring onion julienned
  • 1 cup cabbage shredded
  • 1 tbs sesame seeds
  • 1 1/2 tsp soy sauce

Method

  • Step 1
    Mix all burger ingredients well in a bowl with a fork.
  • Step 2
    Form 4 full sized burgers and fry until cooked through in peanut oil.
  • Step 3
    Keep warm.
  • Step 4
    Clean frypan. Heat peanut oil and add all Asian slaw ingredients including soy to pan.
  • Step 5
    Stir fry until warm and wilted. Serve burgers and slaw.
Recipe Notes
Burgers are not spicy and I served them with a lime zest aioli which worked really well but sour cream might also be an option. I think they might be nice in a burger roll also. Chinese cabbage can also be used.
