A delicious casserole the whole family will enjoy.
Ingredients
- 10 chicken thighs
- 1 carrot sliced
- 1 onion diced
- 2 celery stick sliced
- 4 tbs plain flour
- 2 tbs vegetable stock (liquid)
- 3 chicken stock cube
- 1/2 cup water
- 1 cup tomato puree
- 1 tbs oil
Method

Step 1Cut chicken thighs in ½ and cover in combined flour and vegetable stock.

Step 2Fry chicken for a minute or so on each side and place in a casserole dish.

Step 3Add onion, celery and carrot to frying pan and soften vegetables for a few minutes.

Step 4Add tomato puree and chicken stock.

Step 5Bring to the boil then add to chicken in casserole dish.

Step 6Bake at 180C for 1 hour.

- 1 casserole dish
Recipe Notes
Serve with mashed potato and vegetables. I prefer to use Vegeta stock.
