Ingredients

  • 3/4 cup cherries chopped
  • 100 g butter
  • 3/4 cup brown sugar
  • 2 tbs cocoa
  • 2 tbs golden syrup
  • 1 egg beaten
  • 1 cup self-raising flour
  • 1 tsp lemon rind
  • 1/2 cup choc bits

Method

  • Step 1
    Grease and line a lamington pan.
  • Step 2
    Heat butter, sugar, cocoa and syrup in a saucepan over low heat until combined. Allow to cool.
  • Step 3
    Once cool add remaining ingredients and spread evenly in tin.
  • Step 4
    Bake for approximately 25 minutes at 180C.
  • Step 5
    Allow to cool in pan before cutting. Dust with icing sugar and serve.
