A nice light snack that can also double as a meal.
Ingredients
- 500 g rice
- 8 asparagus
- 1 red capsicum diced
- 1 green capsicum diced
- 1 yellow capsicum diced
- 1 red onion diced
- 1 cup dried breadcrumbs
- 2 cup cheese shredded
- 1 pinch paprika
- 1 pinch ground cumin
Method

Step 1Preheat oven to 180C.

Step 2Steam asparagus stalks and quarter.

Step 3Cook the rice according to directions on packet.

Step 4Lightly coat casserole dish with olive oil or butter.

Step 5Layer the rice, capsicum, onion, asparagus and cheese. Sprinkle with paprika and cumin.

Step 6Sprinkle breadcrumbs and any remaining cheese on the top.

Step 7Bake for approximately 15 minutes.
Recipe Notes
For simplicity, I use the microwave rice packages as they are quick and easy, whilst still giving a good texture. Add flavourings to taste. I use Gruyère and Parmesan cheese.
