Ingredients

  • 500 g rice
  • 8 asparagus
  • 1 red capsicum diced
  • 1 green capsicum diced
  • 1 yellow capsicum diced
  • 1 red onion diced
  • 1 cup dried breadcrumbs
  • 2 cup cheese shredded
  • 1 pinch paprika
  • 1 pinch ground cumin

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Steam asparagus stalks and quarter.
  • Step 3
    Cook the rice according to directions on packet.
  • Step 4
    Lightly coat casserole dish with olive oil or butter.
  • Step 5
    Layer the rice, capsicum, onion, asparagus and cheese. Sprinkle with paprika and cumin.
  • Step 6
    Sprinkle breadcrumbs and any remaining cheese on the top.
  • Step 7
    Bake for approximately 15 minutes.
Recipe Notes
For simplicity, I use the microwave rice packages as they are quick and easy, whilst still giving a good texture. Add flavourings to taste. I use Gruyère and Parmesan cheese.
