Great way to get the kids to eat their vegetables, they will love the cookie cutter cheese shapes.
Ingredients
- 500 g beef mince
- 1 cup onion finely chopped
- 1 cup red capsicum chopped
- 2 garlic clove crushed
- 1 carrot grated medium
- 1 1/2 cup potato grated squeezed dry
- 1 cup tomato sauce
- 425 g canned diced tomato
- 3 slices cheddar cheese cut into strips
- 2 slices cheddar cheese to coat
- 1 olive oil spray
Method

Step 1Preheat oven to 180C.

Step 2Spray a large frypan with olive oil spray.

Step 3Over medium heat brown mince all over for approximately 10 minutes. Remove from pan and drain mince on paper towel.

Step 4Wipe out pan and spray with more olive oil.

Step 5Saute onion, capsicum and garlic for about 5 minutes or until onion is soft.

Step 6Stir in carrot and potato and cook, stirring, for about 5 minutes.

Step 7Stir in mince, tomato sauce and tomatoes. Bring to boil, stirring.

Step 8Spoon half the mince mixture into a casserole dish and top evenly with cheese strips. Spoon over remaining mince.

Step 9Cover and bake for approximately 30 minutes until casserole is bubbling hot.

Step 10Cut extra slices of cheese with cookie cutter shapes and place over beef casserole. Bake for a further 5 minutes and serve.
