Chat potatoes tossed with olive oil, herbs and bacon.
Ingredients
- 15 chat potato small
- 1/2 cup bacon rashers chopped
- 1 tsp dried mixed herbs
- 1 tbs olive oil
Method

Step 1Boil potatoes until the skin just starts to crack open. Drain.

Step 2Warm olive oil and herbs in frypan.

Step 3Add potatoes. Toss to coat in oil.

Step 4Gently turn the potatoes until they cook on each side.

Step 5After about 2 minutes add the bacon.

Step 6Keep tossing until bacon is cooked.

Step 7Serve hot.
Recipe Notes
Omit the bacon for vegetarians. Great served with steak and sour cream.
