It's hard to believe this creamy cauliflower soup is actually cream-less. A healthy and low fat soup option that is packed with vegies and lightly spiced with cauliflower. This soup will easily satisfy your craving for a warm, healthy cauliflower soup. - DIANNE BOSWOD

Ingredients

  • 1 cauliflower broken into florets medium
  • 1 onion finely chopped grated
  • 1 carrot grated large
  • 1 potato grated large
  • 2 tbs chicken stock powder *to taste
  • 1 L water
  • 2 tsp vegetable oil
  • 1/2 tsp curry powder *optional
  • 1 zucchini grated *optional
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Gently soften all the vegetables in the oil over a moderate heat. Add curry powder if using. Do not burn.

    Add chicken stock powder and enough water to cover vegetables.
  • Step 3
    Bring to the boil and then reduce to a simmer.
  • Step 4
    When vegetables are very tender, allow to cool slightly, then blend with handheld stick mixer.
  • Step 5
    At this stage, more liquid may be added according to preference of thickness of soup.
  • Step 6
    Return to heat and simmer for about 30 minutes.
Recipe Notes

All measurements are approximate and must be adjusted according to taste and preferences.

Also very nice with the addition of grated sweet potatoes (gold not white).

Liquid chicken stock can be used in place of the stock cubes.

How do you fix bland cauliflower soup?

You can easy add more curry powder to your taste, or if you have more time we highly recommend roasting your star vegie first. Roast the veg in a low temp oven for about 1 1/2 hours or until golden, this will add beautiful depth of flavour to your soup.

How do you thicken up cauliflower soup?

To start only add the suggested amount of stock or liquid. The liquid should roughly cover the vegies by approx. 2-2.5cm. If you need to add more during your cooking time, you can top it up and then on a low simmer reduce the liquid back down.

If you are short on time, you can add cornstarch or flour, only adding a little bit at a time. We recommend using a seperate bowl, add a couple of tablespoons of cornstarch into a little of the broth, whisk until completely dissolved then add the mix to the main pot, as necessary.
