A yummy soup that is rich in flavour and also filling.

Ingredients

  • 1 bunch fresh coriander finely chopped
  • 1 brown onion chopped
  • 5 carrot roughly chopped
  • 1/2 tbs garlic
  • 30 ml white wine
  • 2 cups vegetable stock (liquid)

Method

  • Step 1
    Heat vegetable stock until warm.
  • Step 2
    Saute onion, garlic and coriander roots in a pan with some olive oil.
  • Step 3
    Add carrots, increase heat and allow to cook for a couple of minutes.
  • Step 4
    Splash the white wine into the hot pan. Add enough stock to cover the ingredients in the pan and cook until the carrots are tender.
  • Step 5
    Season with salt and pepper.
  • Step 6
    Once all vegetables are cooked, puree in a blender to create a smooth textured soup.
  • Step 7
    Garnish with fresh coriander leaf and serve warm.
Recipe Notes

Trust me on the coriander amount! It will seem like a lot, but will really work and be a lovely flavour, not overpowering. Before serving you can swirl through some sour cream, or yoghurt if desired.
