Sweet, fresh and simple - the perfect side dish for those summer barbies.
Ingredients
- 1 pineapple cut into pieces
- 1 fresh red chilli finely chopped
- 100 ml water
- 100 g brown sugar
- 1 tsp fresh mint finely chopped
- 1 tsp fresh coriander finely chopped
- 1/4 cup peanuts roughly chopped
- 1 lime
Method

Step 1Thread pineapple onto skewers. Set aside.

Step 2In a small saucepan, bring to the boil sugar, water and chilli. Bubble until liquid reduces and thickens slightly. Add the coriander and mint.

Step 3Brush skewers with the syrup and grill on barbecue until caramelised. Remove from the barbecue and pour over remaining syrup.

Step 4Scatter over peanuts. Squeeze the juice of one lime over the top.

Recipe Notes
Soak wooden bamboo skewers in water for a few hours or overnight so that the sticks don't burn during cooking.
