So easy to make and it will impress friends and family. I got this recipe from my hairdresser. She makes it for her clients to have with coffee. - mirjam

Ingredients

Base

  • 1 packet buttercake cake mix
  • 1 cup coconut
  • 125 g butter melted

Topping

  • 400 g condensed milk
  • 1 tbs butter
  • 1 tbs golden syrup
  • 1 cup macadamias chopped

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Line a slice pan with baking paper.
  • Step 3
    Base: Mix base ingredients together and press into tin.
  • Step 4
    Bake for 15 minutes.
  • Step 5
    Topping: Combine the condensed milk, butter and golden syrup in a saucepan and heat, stirring until just thickened.

    Remove from heat and add nuts.
  • Step 7
    Pour mixture over the prepared base and return to the oven for 20 minutes.

Equipment

  • 1 20cm x 30cm slice pan
Recipe Notes

I use a potato masher to press the base ingredients. Leave slice to cool completely before cutting. I run my knife under hot water before cutting the slice, it makes it so much easier. My friend bakes this at 160C (fan-forced) and only for 15 minutes for the top as well as the base and her slice is lighter in colour and sweeter to taste. Vanilla cake mix can also be used.
