Crisp green broccolini and sautéed mushrooms topped on a bed of rocket, drizzled with soy dressing and sprinkled with sesame seeds.
Ingredients
- 2 cup mushrooms sliced
- 200 g broccolini
- 3 handfuls rocket leaves
- 1 tsp butter
- 1 tsp crushed garlic
- 1/2 tsp sesame seeds
Dressing
- 2 tbs soy sauce
- 2 tbs white vinegar
- 1 tbs honey
- 3 drops sesame oil
Method

Step 1Place a small saucepan of water on the stove. Bring to a boil.

Step 2Slice broccolini into 4cm lengths and add stems to boiling water for 2 minutes, then add florets. Cook till just tender, strain and rinse under cold water to prevent from continuing to cook. Set aside.

Step 3Return saucepan to stove and add butter and garlic. Add mushrooms and cook until water has evaporated and mushrooms are fragrant.

Step 4For dressing, place all dressing ingredients into a small jug and mix well.

Step 5Place rocket in a serving plate, top with garlic mushrooms, add broccolini and drizzle over dressing. Sprinkle with sesame seeds and serve.
