Ingredients

  • 5 broccoli roughly chopped whole
  • 2 leek roughly chopped washed
  • 3 potato peeled roughly chopped
  • 3 chicken stock cube
  • 1 tsp ground nutmeg
  • 1 pinch pepper *to taste
  • 1/2 cup parmesan coarsely grated *to serve
  • 1/2 cup cream *to serve

Method

  • Step 1
    Add all ingredients except cheese and cream into a large saucepan or soup pot.
  • Step 2
    Just cover with boiling water and simmer until tender.
  • Step 3
    Blend and serve with a swirl of cream and a sprinkle of grated parmesan cheese.
Recipe Notes

Lovely served with fresh crusty bread. Serve for lunch or as a starter to a main meal. To make this vegetarian, you could use vegetable stock and omit cheese and cream depending on your preferences. Massell brand of stock cubes is preferred. For a thicker soup, add a little less water.
