Bourbon Whisky BBQ Sauce

Got this delicious recipe from my niece in Seattle when I visited the USA in 2017. Smooth or lumpy, you can decide. I now use this on everything from marinating, basting and for the sauce in pulled pork. - Stephanie Little

Ingredients

  • 1/2 onion finely diced
  • 4 garlic cloves minced
  • 3/4 cup bourbon whisky
  • 1/2 tsp black pepper ground
  • 1/2 tsp salt ground
  • 2 cups tomato sauce
  • 1/4 cup tomato paste
  • 1/3 cup apple cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1/2 cup brown sugar firmly packed
  • 2 tbs liquid smoke flavouring
  • 1/3 tsp Tabasco *to taste

Method

  • Step 1
    Heat a large frypan over medium heat, then combine the onion, garlic and whiskey. Simmer for 10 minutes, or until the onion is translucent.
  • Step 2
    Mix in the ground black pepper, salt, tomato sauce, tomato paste, vinegar, Worcestershire sauce, brown sugar, liquid smoke flavouring and Tabasco sauce.
  • Step 3
    Bring to a boil. Reduce to a medium-low heat and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

I make in large batches because with proper bottling it keeps in the cupboard/fridge for months.
