Got this delicious recipe from my niece in Seattle when I visited the USA in 2017. Smooth or lumpy, you can decide. I now use this on everything from marinating, basting and for the sauce in pulled pork.
Ingredients
- 1/2 onion finely diced
- 4 garlic cloves minced
- 3/4 cup bourbon whisky
- 1/2 tsp black pepper ground
- 1/2 tsp salt ground
- 2 cups tomato sauce
- 1/4 cup tomato paste
- 1/3 cup apple cider vinegar
- 1/4 cup Worcestershire sauce
- 1/2 cup brown sugar firmly packed
- 2 tbs liquid smoke flavouring
- 1/3 tsp Tabasco *to taste

Step 1Heat a large frypan over medium heat, then combine the onion, garlic and whiskey. Simmer for 10 minutes, or until the onion is translucent.

Step 2Mix in the ground black pepper, salt, tomato sauce, tomato paste, vinegar, Worcestershire sauce, brown sugar, liquid smoke flavouring and Tabasco sauce.

Step 3Bring to a boil. Reduce to a medium-low heat and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.
Recipe Notes
I make in large batches because with proper bottling it keeps in the cupboard/fridge for months.
