This is a great pantry standby meal.
Ingredients
- 1 onion chopped
- 1 cup ham (deli) diced
- 420 g red canned kidney beans
- 2 x 420 g canned baked beans
- 400 g canned diced tomato
- 1 tsp sugar
- 1 tsp mustard
- 1/2 cup beef stock (liquid)
- 1/4 cup tomato sauce
- 1/4 cup barbecue sauce
- 1/2 tsp mixed herbs
- 8 frankfurts
Method

Step 1In a large pan, saute onion and bacon in a little oil.

Step 2Slice frankfurters into bite sized pieces and add to pan.

Step 3Add remaining ingredients to the pan and bring to the boil.

Step 4Simmer for 15-20 minutes, stirring occasionally.
Recipe Notes
Mustard can be hot English, wholegrain, French or whatever you prefer. You can make this dish vegetarian by replacing with vegetarian frankfurters or mixed chopped zucchini, carrots and capsicum and vegetable stock. Use diced ham or bacon. Frankfurters or cabanossi sticks.
