A moist fruit cake that is so easy to make.
Ingredients
- 500 g Woolworths Mixed Fruit
- 440 g (crushed) canned pineapple
- 1 cup sugar
- 125 g butter chopped
- 1 tsp mixed spice
- 1/2 tsp ground cinnamon
- 1 tsp bicarbonate of soda
- 2 eggs beaten
- 1 cup self-raising flour
- 1 cup plain flour
Method

Step 1Place fruit, crushed pineapple including juice, butter, sugar and spices in a saucepan. Boil for 5 minutes.

Step 2Add bicarbonate of soda. Turn off heat and allow to cool.

Step 3Add eggs and flour.

Step 4Preheat oven 160C. Pour into a prepared cake tin and bake for 40 minutes or until the top is golden.

Step 5Remove from oven, cover with foil and bake for a further 50 minutes.

- 1 saucepan
- 1x 23cm non-stick springform pan
Recipe Notes
Don't drain the canned pineapple.
I use a 23cm springform cake pan and line with Glad bake. I also have made it in a 20cm cake pan lined.
I like to leave the lid on the saucepan, whilst it is cooling and usually boil the ingredients before going to bed.
