A moist fruit cake that is so easy to make.

Ingredients

  • 500 g Woolworths Mixed Fruit
  • 440 g (crushed) canned pineapple
  • 1 cup sugar
  • 125 g butter chopped
  • 1 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 1 tsp bicarbonate of soda
  • 2 eggs beaten
  • 1 cup self-raising flour
  • 1 cup plain flour

Method

  • Step 1
    Place fruit, crushed pineapple including juice, butter, sugar and spices in a saucepan. Boil for 5 minutes.

  • Step 2
    Add bicarbonate of soda. Turn off heat and allow to cool.
  • Step 3
    Add eggs and flour.
  • Step 4
    Preheat oven 160C. Pour into a prepared cake tin and bake for 40 minutes or until the top is golden.
  • Step 5
    Remove from oven, cover with foil and bake for a further 50 minutes.

Equipment

  • 1 saucepan
  • 1x 23cm non-stick springform pan
Recipe Notes

Don't drain the canned pineapple.

I use a 23cm springform cake pan and line with Glad bake. I also have made it in a 20cm cake pan lined.

I like to leave the lid on the saucepan, whilst it is cooling and usually boil the ingredients before going to bed.
