I've added to the Hokkien noodle stir-fry to give it extra flavour and everyone who has tried my version no longer buys it from take-out stores.
Ingredients
- 3 tbs oyster sauce
- 3 tbs soy sauce
- 2 garlic cloves grated
- 1 tbs white sugar
- 250 g bean shoots
- 1 green capsicum thinly sliced
- 1 red capsicum thinly sliced
- 500 g chicken breast chopped into small pieces
- 250 g green beans fresh
- 2 x 440 g Hokkien noodle
- 1 cup cornflour
Method

Step 1Place chicken in cornflour and coat thoroughly.

Step 2In a frying pan over medium heat, cook chicken and garlic until chicken is cooked through.

Step 3Add green beans and cook for 5 minutes.

Step 4Add capsicum and cook for 5 minutes, or until soft.

Step 5Add noodles and cook for 5 minutes, or until noodles are hot.

Step 6Add bean shoots and stir thoroughly.

Step 7Add sugar and sauces and mix thoroughly, cook for 5 more minutes.
Recipe Notes
When buying the Hokkien noodles be sure to check the packet, you don't want the thin Hokkien version. You can also add extra sauce if you like more flavour
