Ingredients

  • 1 cup plain flour
  • 100g butter melted
  • 1 egg
  • 1/2 cup caster sugar
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla essence
  • 3 cup mixed berries fresh

Custard Topping

  • 2 cup sour cream
  • 1/2 cup caster sugar
  • 1 1/2 tbs custard powder
  • 2 egg yolks
  • 1 tsp vanilla essence

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Prepare a large pan (23cm springform or equivalent) by either greasing and flouring, or using baking paper.
  • Step 3
    To make the sponge base, mix together the sifted flour, butter, egg, caster sugar, baking powder and vanilla. Pour into the tin.
  • Step 4
    Evenly spread the berries over the sponge base.

    To make the custard topping, beat all the ingredients together and pour over the top of the berries.
  • Step 6
    Bake for 50 - 60 minutes. Top should look firm when cooked.
  • Step 7
    Serve hot or cold.
Recipe Notes

If you use a springform pan, let cake cool for a while, to allow the custard to set a little, before removing. I line the tin with baking paper enough to go halfway up the sides to prevent any spillage. Very simple, quick and delicious. Use fresh or frozen berries.
