Quick and easy dessert cake with sponge base, topped with berries and custard. Delicious way to use up those frozen berries in the freezer.
Ingredients
- 1 cup plain flour
- 100g butter melted
- 1 egg
- 1/2 cup caster sugar
- 1 1/2 tsp baking powder
- 1 tsp vanilla essence
- 3 cup mixed berries fresh
Custard Topping
- 2 cup sour cream
- 1/2 cup caster sugar
- 1 1/2 tbs custard powder
- 2 egg yolks
- 1 tsp vanilla essence
Method

Step 1Preheat oven to 180C.

Step 2Prepare a large pan (23cm springform or equivalent) by either greasing and flouring, or using baking paper.

Step 3To make the sponge base, mix together the sifted flour, butter, egg, caster sugar, baking powder and vanilla. Pour into the tin.

Step 4Evenly spread the berries over the sponge base.

Step 5To make the custard topping, beat all the ingredients together and pour over the top of the berries.

Step 6Bake for 50 - 60 minutes. Top should look firm when cooked.

Step 7Serve hot or cold.
Recipe Notes
If you use a springform pan, let cake cool for a while, to allow the custard to set a little, before removing. I line the tin with baking paper enough to go halfway up the sides to prevent any spillage. Very simple, quick and delicious. Use fresh or frozen berries.
