This is a lovely berry bircher muesli for breakfast time, especially in summer.
Ingredients
- 3 cup rolled oats
- 2 cup natural yoghurt
- 3 cup apple juice
- 2 apple grated skin on
- 1 apple thinly sliced
- 1/2 cup whole almonds chopped
- 1 cup shredded coconut
- 1/4 cup honey *to taste
- 300 g frozen mixed berries
- 2 tsp ground cinnamon *optional
Method

Step 1Combine oats, natural yoghurt, apple juice and honey. Refrigerate overnight.

Step 2Defrost berries in refrigerator overnight.

Step 3Next morning mix in remaining ingredients.
Recipe Notes
I use Farmers Union Greek style yoghurt. Sometimes I leave a cup of berries out of the mixture and scatter over the top. You could also use diced dried apricots and sultanas in place of the berries. Combine with other ingredients the night before eating so they soften.
