Ingredients

  • 1 tbs oil
  • 1 onion chopped
  • 1 carrot chopped
  • 500 g beef mince
  • 2 tbs tomato paste
  • 400 g canned crushed tomatoes
  • 30 g butter melted optional
  • 1 tsp Vegemite
  • 1 tsp Worcestershire sauce
  • 1 tsp mixed herbs
  • 440 g canned baked beans
  • 2/3 cup frozen peas
  • 440 g canned baby potatoes
  • 3/4 cup cheese grated

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Cook onion in oil until tender.
  • Step 3
    Add carrot and mince, cook until mince is browned.
  • Step 4
    Stir in tomato paste, undrained tomatoes, Vegemite, Worcestershire sauce and herbs.
  • Step 5
    Bring to the boil, simmer, uncovered for 10 minutes, or until carrots are just tender.
  • Step 6
    Add beans (including sauce) and peas. Simmer for 5 minutes.
  • Step 7
    Pour into baking dish.
  • Step 8
    Slice potatoes thinly, place over mince. Brush with melted butter, if desired, sprinkle with cheese.
  • Step 9
    Bake uncovered for 30 minutes (or for 20 minutes at 200C).

Recipe Notes

Can use fresh potatoes instead, just cook them slightly beforehand.

If watching weight, use reduced fat cheese, and eliminate the butter, it doesn't alter the taste.
