Ingredients

  • 500 g fresh beans cooked
  • 440 g Three-Bean canned mixed beans
  • 1 red capsicum chopped
  • 1 onion sliced

Dressing

  • 1/2 cup light olive oil
  • 3 tbs white vinegar
  • 2 tbs brown sugar
  • 1/2 tsp mustard powder
  • 2 garlic cloves crushed small
  • 1 tsp dried basil leaves

Method

  • Step 1
    Combine all ingredients for dressing and shake well. Pour over combined bean mix and refrigerate for several hours.
Recipe Notes

I use fresh or frozen green beans, but any combination of beans can be used depending on what you have on hand. Try substituting any of the following: kidney beans, chick peas, yellow beans or 4 bean mix.

Red capsicum can be substituted with cherry tomatoes.

The idea is to make it appealing by having lots of colour.
