Ingredients

  • 600 g chicken pieces
  • 2 tbs basil pesto
  • 1/4 cup olive oil

Method

  • Step 1
    Preheat oven to 200-210C.
  • Step 2
    Add a little olive oil to a baking dish.
  • Step 3
    Place chicken in the baking dish and spread a tablespoonful of pesto evenly over each piece.
  • Step 4
    Drizzle a little more olive oil over the chicken.
  • Step 5
    Cover with aluminium foil and bake in the oven for about 40 minutes.
  • Step 6
    Remove foil and leave in oven for a further 15 minutes to let the pesto form a crust.
Recipe Notes
I used basil and cashew pesto. I usually serve this with some fresh vegetables in winter or a salad in summer. You can even use some of the juices as a sauce. This is a very cheap and easy dish but it tastes gourmet!
