A simple, quick and delicious recipe for the whole family.
Ingredients
- 600 g chicken pieces
- 2 tbs basil pesto
- 1/4 cup olive oil
Method

Step 1Preheat oven to 200-210C.

Step 2Add a little olive oil to a baking dish.

Step 3Place chicken in the baking dish and spread a tablespoonful of pesto evenly over each piece.

Step 4Drizzle a little more olive oil over the chicken.

Step 5Cover with aluminium foil and bake in the oven for about 40 minutes.

Step 6Remove foil and leave in oven for a further 15 minutes to let the pesto form a crust.
Recipe Notes
I used basil and cashew pesto. I usually serve this with some fresh vegetables in winter or a salad in summer. You can even use some of the juices as a sauce. This is a very cheap and easy dish but it tastes gourmet!
