Ingredients

  • 1 oil spray
  • 2 tbs soft brown sugar
  • 1 banana sliced
  • 1 cup plain flour
  • 1 cup caster sugar
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 eggs lightly beaten
  • 1/4 cup olive oil
  • 1/4 cup skim milk
  • 2 bananas mashed ripe
  • 2 tsp vanilla extract
  • 200 g low-fat vanilla yoghurt *to serve

Method

  • Step 1
    Preheat oven to 170C and lightly spray a 20 cm springform cake pan with oil.
  • Step 2
    Line base with baking paper. Sprinkle brown sugar onto base of pan and arrange sliced banana in a single layer on top.
  • Step 3
    Combine flour, sugar, baking powder and bicarbonate of soda in a large bowl.
  • Step 4
    Combine eggs, oil, milk, mashed bananas and vanilla in another bowl.
  • Step 5
    Pour egg mixture into flour mixture and combine with a large spoon.
  • Step 6
    Pour into prepared cake pan and bake for 50 minutes or until skewer inserted into centre of the cake comes out clean.
  • Step 7
    Stand cake for a few minutes before turning onto a wire rack to cool. Serve with a dollop of yoghurt.

Equipment

  • 1 20cm springform pan
Recipe Notes

If you don't have baking powder, bicarb soda and plain flour, you can substitute them for 1 cup self raising flour.

If you have bananas that are starting to turn, put them in the freezer until you can make the cake again.
