Ingredients

  • 2 cup plain flour
  • 3 tsp baking powder
  • 1 pinch salt
  • 1/3 cup sugar
  • 50 g butter melted
  • 2 egg beaten
  • 1 1/2 cup milk
  • 1 tbs butter
  • 100 ml maple syrup *to serve

Banana topping

  • 2 tbs butter
  • 2 tbs brown sugar
  • 3 banana peeled sliced

Method

  • Step 1
    Sift flour, baking powder and salt.
  • Step 2
    Whisk in sugar, butter, eggs and milk until smooth.
  • Step 3
    Heat extra butter in a frying pan and pour batter to form circles approximately 15 cm in diameter.
  • Step 4
    When pancakes bubble, flip and cook until browned.
  • Step 5
    Banana topping: Melt butter in frying pan.
  • Step 6
    Add sugar and stir until dissolved and bubbling.
  • Step 7
    Add banana and cook until browned on both sides.
  • Step 8
    Gently place onto pancakes and drizzle with maple syrup.
Recipe Notes
These taste divine and are extremely filling. Topping variations that are equally as delicious: add ½ cup cooked apple and some cinnamon to the pancake batter, or top the plain pancakes with fresh raspberries, a tablespoon of vanilla fruche and drizzle with maple syrup.
