A lovely breakfast or dessert meal of light pancakes served with caramelised banana.
Ingredients
- 2 cup plain flour
- 3 tsp baking powder
- 1 pinch salt
- 1/3 cup sugar
- 50 g butter melted
- 2 egg beaten
- 1 1/2 cup milk
- 1 tbs butter
- 100 ml maple syrup *to serve
Banana topping
- 2 tbs butter
- 2 tbs brown sugar
- 3 banana peeled sliced
Method

Step 1Sift flour, baking powder and salt.

Step 2Whisk in sugar, butter, eggs and milk until smooth.

Step 3Heat extra butter in a frying pan and pour batter to form circles approximately 15 cm in diameter.

Step 4When pancakes bubble, flip and cook until browned.

Step 5Banana topping: Melt butter in frying pan.

Step 6Add sugar and stir until dissolved and bubbling.

Step 7Add banana and cook until browned on both sides.

Step 8Gently place onto pancakes and drizzle with maple syrup.
Recipe Notes
These taste divine and are extremely filling. Topping variations that are equally as delicious: add ½ cup cooked apple and some cinnamon to the pancake batter, or top the plain pancakes with fresh raspberries, a tablespoon of vanilla fruche and drizzle with maple syrup.
