This doesn't last 5 minutes in my house! It's never failed me and is delicious, iced or left plain.
Ingredients
- 115g butter
- 1 1/4 cups brown sugar
- 2 eggs
- 1 1/2 cups self-raising flour
- 1 tsp baking soda
- 3/4 cup sour cream
- 1 tbs milk
- 1 cup banana mashed
Method

Step 1Preheat oven to 180C.

Step 2Grease and line a loaf pan.

Step 3Cream butter with brown sugar.

Step 4Add eggs, one at a time, and beat well.

Step 5Sift flour and baking soda into mixture and combine.

Step 6Add sour cream, milk and mashed banana.

Step 7Stir until combined.

Step 8Bake in loaf pan for 50-60 minutes.

- 1 loaf pan
Recipe Notes
If more banana is used, don't use milk or as much sour cream.
You can also add 1 cup of sultanas.
