Ingredients

  • 115g butter
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 1 1/2 cups self-raising flour
  • 1 tsp baking soda
  • 3/4 cup sour cream
  • 1 tbs milk
  • 1 cup banana mashed

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Grease and line a loaf pan.
  • Step 3
    Cream butter with brown sugar.

    Add eggs, one at a time, and beat well.
  • Step 5
    Sift flour and baking soda into mixture and combine.
  • Step 6
    Add sour cream, milk and mashed banana.
  • Step 7
    Stir until combined.
  • Step 8
    Bake in loaf pan for 50-60 minutes.

Equipment

  • 1 loaf pan
Recipe Notes

If more banana is used, don't use milk or as much sour cream.

You can also add 1 cup of sultanas.
