This is a delicious recipe and I am always complimented on it.
Ingredients
- 1 tbs peanut oil
- 1 1/5 kg lamb loin chops
- 2 brown onions small
- 1/2 cup crunchy peanut butter
- 1/4 cup sweet chilli sauce
- 2 tbs lemon juice
- 3/4 cup coconut milk
- 3/4 cup water
- 2 tbs coriander chopped
Method

Step 1In an electric frypan, brown lamb in oil. Remove and drain fat from pan.

Step 2Add sliced onion and cook until brown.

Step 3Add peanut butter, chilli sauce, coconut milk and water. Stir on a low heat until sauce starts to thicken.

Step 4Return lamb to pan and cover.

Step 5Simmer slowly for 30 minutes or until lamb is cooked through. Turn lamb occasionally to coat in sauce.
Recipe Notes
If sauce is too thin at end of cooking, take lid off and simmer for 10 minutes or until sauce thickens.
Serve with rice and steamed vegetables. This delicious sauce is also great served over any meat and vegetables.
