Ingredients

  • 1/2 cup arborio rice
  • 1 L milk
  • 2 tbs sugar
  • 1 tbs unsalted butter
  • 1 tbs nutmeg

Method

  • Step 1
    Heat oven to 150C.
  • Step 2
    Scatter rice over the base of a baking dish and add ½ cup of water.
  • Step 3
    Place in oven until the water is absorbed.
  • Step 4
    Stir in milk and sugar.
  • Step 5
    Bake for about 40 minutes until thick and creamy, adding more milk if necessary.
  • Step 6
    Stir in butter and sprinkle nutmeg over the top of rice.

    Return to oven for a further 10 minutes.

  • 1 baking dish
Recipe Notes

This is a good dessert to cook on the bottom shelf of the oven while something else, such as a roast, is cooking in the middle.
