An old fashioned favourite which is delicious hot or cold.
Ingredients
- 1/2 cup arborio rice
- 1 L milk
- 2 tbs sugar
- 1 tbs unsalted butter
- 1 tbs nutmeg
Method

Step 1Heat oven to 150C.

Step 2Scatter rice over the base of a baking dish and add ½ cup of water.

Step 3Place in oven until the water is absorbed.

Step 4Stir in milk and sugar.

Step 5Bake for about 40 minutes until thick and creamy, adding more milk if necessary.

Step 6Stir in butter and sprinkle nutmeg over the top of rice.

Step 7Return to oven for a further 10 minutes.

Recipe Notes
This is a good dessert to cook on the bottom shelf of the oven while something else, such as a roast, is cooking in the middle.
