Ingredients

  • 4 eggs
  • 1/2 cup milk
  • 1/4 cup parmesan cheese
  • 1/2 cup thickened cream
  • 2 sheets puff pastry thawed
  • 1/2 cup plain flour organic
  • 1 bunch asparagus cut into pieces
  • 100 g ham (deli) chopped
  • 1 leek
  • 1 red onion finely chopped
  • 1 tbs olive oil
  • 2 tsp brown sugar
  • 1 egg whites
  • 1 cooking oil spray

Method

  • Step 1
    Preheat oven to 180C. Prepare quiche dish with cooking spray. Finely cut white part of leek.
  • Step 2
    Cook leeks with a little oil, then add brown sugar to caramelise. Add asparagus and cook until softened.
  • Step 3
    Add the ham, onion, salt and pepper.
  • Step 4
    Combine together the flour, cream, milk, salt, pepper, Parmesan cheese and eggs.
  • Step 5
    Prepare quiche tray with a covering of the pastry, add a little egg white on the edges.
  • Step 6
    Add the asparagus mixture to the cream mixture and pour into the quiche dish, spray top with cooking spray.
  • Step 7
    Bake for 40-50 minutes.
Recipe Notes

To know when quiche is cooked place a knife in the middle and if it comes out clean it is cooked.

Great served hot or cold, great for lunches and with a tomato, rocket salad with balsamic dressing.
