Baked fish with an additional boost of healthy vegetables.
Ingredients
- 2 green onion
- 1 red capsicum thinly sliced
- 1 carrot julienned
- 4 white fish fillet thick
- 1/4 cup light soy sauce
Method

Step 1Preheat oven to 200C.

Step 2Cut onion into 5 cm lengths, finely sliced. Combine vegetables in a bowl by tossing.

Step 3Line a baking dish with baking paper, overhanging a little to form a parcel later.

Step 4Place fish in baking dish. Top each fillet with vegetables.

Step 5Drizzle with soy sauce and season with salt and pepper.

Step 6Place another sheet of baking paper over fish. Fold all sides of baking paper to form a parcel.

Step 7Bake for 12-15 minutes or until fish flakes with a fork.
