For a delicious flavour combination, it's hard to beat this apricot and white chocolate oat slice that's perfect for lunch boxes!
Ingredients
- 1 tbs butter melted
- 1/2 cup self-raising flour
- 1 cup rolled oats
- 1/2 cup plain flour
- 2/3 cup desiccated coconut
- 2/3 cup brown sugar
- 2/3 cup dried apricots finely chopped
- 1/2 cup white choc bits
- 125 g butter cooled melted
- 1 egg whisked

Step 1Preheat oven to 180C or 160C degrees for fan forced oven.

Step 2Brush a 17 x 27cm (base measurement) slab pan with melted butter to lightly grease.Line the base and two opposite long sides with non-stick baking paper, allowing it to overhang.

Step 3Sift the combined flours into a bowl. Add the oats, coconut, sugar, chopped apricots and white choc bits, and stir to combine.

Step 4Make a well in the centre and add the melted butter and egg. Use a wooden spoon to stir until well combined.

Step 5Spoon mixture into prepared pan and use the back of a spoon to smooth the surface.

Step 6Bake in preheated oven for 20 minutes or until golden brown and firm to the touch.

Step 7Remove from oven and set aside to cool completely. Cut into squares to serve.
