Ingredients

  • 375 g chicken mince
  • 1/2 cup dried breadcrumbs
  • 1 egg
  • 1/2 cup dried apricots finely chopped
  • 1/2 cup macadamias finely chopped
  • 1 tbs light soy sauce
  • 3 tsp fresh coriander chopped
  • 1 fresh coriander *to serve

Method

  • Step 1
    Process apricots, nuts, egg and soy sauce.
  • Step 2
    Add the chicken, breadcrumbs and chopped coriander and process until well combined.
  • Step 3
    Roll 1 heaped teaspoon of mixture into a ball and top with an extra coriander leaf.
  • Step 4
    Repeat with remaining mixture and extra coriander.
  • Step 5
    Place the balls in the top half of a steamer in a single layer and cook, covered, over boiling water for about 8 minutes.
  • Step 6
    Cool and refrigerate.
  • Step 7
    Makes about 50. Serve with sweet chilli sauce.

  • 1 2-tiered steamer
Recipe Notes

Can be made a day ahead, just store in the refrigerator.

I reheat them in the microwave before serving, although they can be served cold.
