Chicken, apricot and macadamia steamed balls.
Ingredients
- 375 g chicken mince
- 1/2 cup dried breadcrumbs
- 1 egg
- 1/2 cup dried apricots finely chopped
- 1/2 cup macadamias finely chopped
- 1 tbs light soy sauce
- 3 tsp fresh coriander chopped
- 1 fresh coriander *to serve
Method

Step 1Process apricots, nuts, egg and soy sauce.

Step 2Add the chicken, breadcrumbs and chopped coriander and process until well combined.

Step 3Roll 1 heaped teaspoon of mixture into a ball and top with an extra coriander leaf.

Step 4Repeat with remaining mixture and extra coriander.

Step 5Place the balls in the top half of a steamer in a single layer and cook, covered, over boiling water for about 8 minutes.

Step 6Cool and refrigerate.

Step 7Makes about 50. Serve with sweet chilli sauce.

- 1 2-tiered steamer
Recipe Notes
Can be made a day ahead, just store in the refrigerator.
I reheat them in the microwave before serving, although they can be served cold.
