Ingredients

  • 8 sausage
  • 1/3 sultanas
  • 2 onion medium thinly sliced
  • 2 tbs sweet soy sauce
  • 2 tbs brown sugar
  • 410 g canned apricot chopped reserve liquid
  • 3 tbs cornflour
  • 1 tbs water

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Place sausages into a 2 litre casserole dish.
  • Step 3
    Add onions, sultanas, soy sauce, and brown sugar.
  • Step 4
    Stir in apricots and juice.
  • Step 5
    Cover and bake for approximately 45 minutes.
  • Step 6
    Stir through cornflour and return to the oven for a few minutes.

Equipment

  • 1 casserole dish
Recipe Notes
Serve with mashed potatoes, and fresh vegetables. Slice precooked sausages 2cm thick and use can apricot halves.
