A variation on the 5-minute chocolate mug cake.
Ingredients
- 3 tbs self-raising flour
- 2 tbs brown sugar
- 1/4 tsp ground cinnamon
- 1/2 egg beaten
- 2 tbs apple grated
- 1 tbs milk
- 1 tbs oil
- 1 pinch white sugar *to decorate
- 1 pinch cinnamon *to decorate *extra
Method

Step 1Place dry ingredients in a large coffee mug and mix well with a fork. Add egg.

Step 2Add remaining ingredients and combine well. Make sure there are no pockets of dry flour in the bottom of the mug.

Step 3Cover loosely with cling wrap and microwave on high for 2 minutes. Allow to stand for a minute, then run a knife around the inside to loosen.

Step 4Tip cake out onto a plate. Serve with butter and a sprinkle of cinnamon and white sugar.
Recipe Notes
Cooking time is based on a 800 Watt microwave. You may need to adjust the time to suit your microwave to avoid overcooking which results in dryness. Try cooking for 1 minute, and if it needs longer, additional bursts of 15 seconds until done.
Nutmeg can be substituted for cinnamon if preferred.
Remaining egg can be frozen.
This can be served with custard.
