Ingredients

  • 600 g rhubarb cut into pieces
  • 5 granny smith apple
  • 1 cup caster sugar

Crumble

  • 1 cup plain flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup coconut
  • 65 g unsalted butter

Method

  • Step 1
    Combine rhubarb with caster sugar and cook over low heat approximately 15 minutes.
  • Step 2
    Peel and cut apples, then add to rhubarb and cook for a further 10-15 minutes.
  • Step 3
    Spoon into ramekins.
  • Step 4
    To make crumble, mix dry ingredients with butter to form a breadcrumb like mixture.
  • Step 5
    Place crumble mix over top of each ramekin and bake at 180C for approximately 25 minutes.
  • Step 6
    Serve with ice-cream and cream.

  • 1 wooden spoon
  • 4 125ml capacity ramekins
